Simple Wild Blueberry Granola Picture New Recipe

Ingredients

  • 3 cups old fashioned oats
  • 1 cup sliced almonds
  • 1 cup pumpkin seeds
  • 1 cup ground flaxseed
  • 1 cup dried wild blueberries
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 2/3 cup extra virgin olive oil
  • 2/3 cup brown sugar
  • 1/2 cup water

Preparation

  1. Set oven to 300F and line a baking sheet with parchment paper
  2. In a large bowl, combine oats, nuts, seeds, dried wild blueberries, salt and cinnamon.
  3. In a small saucepan over medium heat, combine brown sugar, oil and water. Stir until the sugar dissolves and the mixture starts to bubble (about 2-3 minutes). Remove from heat.
  4. Pour the syrup over the oat mixture and stir until everything is well coated.
  5. Spread the mixture evenly on the baking sheet. Bake for 40-45 minutes, stirring halfway through for even baking. If you prefer chunkier granola, press the mixture down before baking and avoid stirring.
  6. Let the granola cool completely on the baking sheet – it will crisp up as it cools.
  7. Keep in an airtight container at room temperature for up to 2 weeks.
