Wild Blueberry Turnovers

Ingredients
1.5 cups (375 ml) fresh or frozen wild blueberries
2 teaspoons cornstarch
2 tablespoons maple syrup
8 sheets phyllo dough
4 tablespoons (60 ml) melted butter or oil
Topping: maple butter or caramel (optional)
Preparation
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the wild blueberries with the cornstarch and maple syrup.
- On a work surface, place two sheets of phyllo dough on top of each other. Brush a thin layer of melted butter over the entire surface. Cut the phyllo dough in half lengthwise.
- Place about 2 tablespoons (30 ml) of the wild blueberry mixture on one half, at the base. Fold the dough lengthwise. Using a brush, spread a thin layer of butter over the entire surface. Fold into successive triangles until you reach the end of the rectangle. You will end up with a triangle-shaped turnover. Brush with butter one last time.
- Place the turnovers on a baking sheet lined with reusable baking paper or parchment paper.
- Bake in the center of the oven for 15 minutes.
- Let cool, then drizzle with maple butter or caramel if desired.
