Wild Blueberry Salad with Barley and Dill Picture

Ingredients

Salad dressing
2 tbsp red wine vinegar
2 tbsp extra virgin olive oil or canola oil
Salad

1½ cup diced English cucumber
1½ to 1⅓ cup cooked pot barley
½ cup chopped fresh dill
1 cup fresh canadian wild blueberries, rinsed well and patted dry
½ cup crumbled feta cheese

Preparation

Salad dressing

In a large bowl, whisk together the vinegar and oil.

Salad

In a large bowl, add the cucumbers, cooked barley, dill, blueberries, and feta. Toss well with dressing and serve right away.
