Canadian Wild Blueberry Chutney Picture New Recipe

Ingredients

2 cups frozen Canadian Wild Blueberries

1/2 cup onion, finely minced

1 clove garlic, minced

1 tablespoon grated fresh ginger

Zest of one orange

1/3 cup apple cider vinegar (or balsamic vinegar)

1/4 cup maple syrup (or honey)

2 cinnamon sticks (or 1 teaspoon ground cinnamon)

2 star anise (optional)

1 pinch salt

2 pinches black pepper

1 tablespoon corn starch

Preparation

In a medium saucepan, combine all ingredients. Bring to a full boil over medium heat, then reduce heat to a strong simmer, and stir frequently for about 12 minutes.

Remove and discard the cinnamon stick and star anise.

Let the chutney cool for 30 minutes. Serve immediately, or store in an airtight jar. Chutney will last in the refrigerator for up to 4 weeks or the freezer for up to 6 months.  Alternately, you can freeze in ice cube trays and store in the freezer in a resealable plastic bag.
