Wild Blueberry and Mango Lassi

Wild Blueberry and Mango Lassi Picture

Ingredients

1 ¼ cups (200g) frozen wild blueberries
1 ½ cups (250g) yogurt (not Greek)
1/2 lemon juiced
2 tbsps (30ml) honey
¼ tsp (5g) freshly grated ginger
Handful of ice cubes
1 ¼ cups (200g) fresh, ripe, peeled and cut Mango
1 ½ cups (250g) yogurt (not Greek)
2 tbsp (30g) honey
4 strands of saffron soaked in a teaspoon of warm water
Handful of ice cubes

Preparation

  1. Combine wild blueberries, yogurt, lemon juice, honey and ginger in a blender. Pulse a few times to combine. Add the ice cubes and blend until smooth.
  2. Let it sit in the refrigerator.
  3. Combine mangoes, yogurt, honey and saffron in a blender. Pulse a few times to combine. Add the ice cubes and blend until smooth.
  4. Layer in a clear glass – garnish with wild blueberries and mint. Use the back of a spoon to gently pour – make as many layers as you like
  5. Serve immediately.
