Wild Blueberry Sausages
¼ cup (60 ml) fresh or frozen wild blueberries
¼ cup (60 ml) water
2 lb (1 k) medium ground pork (20-30% fat)
2 tsp (10 ml) kosher salt
2 tbsp (30 ml) finely chopped fresh rosemary (leaves only, stems discarded)
½ tsp (2 ml) chili flakes
- Add wild blueberries and water to a blender or food processer and purée.
- Add pork to large bowl, add the salt, rosemary, chili flakes and wild blueberry puree. Mix very well with clean hands until fully combined.
- Form into patties about the size of a slim hockey puck, or stuff into casings. Once formed, transfer to refrigerator and allow to chill for at least 2 hours.
- To serve, fry sausages in a skillet over medium heat until golden brown all over and cooked through; about 5 – 7 minutes per side.
